Is Organic brown sugar that we get in stores equivalent to Jaggery? Could we use it generously in our foods?

The processing is different. I feel organic jaggery is better than organic brown sugar. Palm sugar even better than jaggery. If you cant get these, then organic brown sugar can be used.

Palm jaggery that we get has lot of fine sand in it, how do we filter that jaggery syrup? It is even very hard and difficult to break it into pieces for usage.

Just dissolve it in water (or boil) and remove the bottom settlements. This thick syrup can be used quickly than the solid form.

Recently I see "Evaporated cane juice" in health store sugar packs. As per few websites, it is not advisable to have the product mentioned as Evaporated cane juice.

Any thoughts on this?

According to most sources of information, evaporated cane juice has a slightly better traces of molasses traces than the white sugar. So using it is not significant than using the white sugar. Still good to use is jaggary and even better is palm jaggery where it is very less processed and so many nutrients are retained.
