Each grain has some specific bacteria and fermentation augments its growth. Finger millets also brings its own benefit. Infact all ancient cultures did more fermentation and harvested the gut-microbe advantage.

How should I eat the fermented rice for healing candida infection in the gut. do i eat it alone or with other food.

For a few weeks if one can be on fermented foods like rice along with steamed vegetables and free from processed foods, there will be good improvement.

Can i add palm sugar? Small amounts okay.

is it better in the morning or at night? Any time good. Better avoid in night time. Use other grains in the times when you dont eat fermented rice.

I soak in night, morning by 4:30 am i pressure rice in same water. The cooked rice always will have some leftover water. -- Do i need to evaporate this water and add another set of warm water / can i put curd in this same water

This is how I do. Soak rice in the morning with water. Cook the rice in the evening in the same water and after cooking Keep the left over water in the rice. Add some more water and mix cooked rice with clean hands (just tap washing of the hands is fine). Then the bacteria from your hand-skin will get into the rice and allow it to ferment. Allow this cooked rice to ferment till next day morning or till lunch time. I usually eat the fermented rice.

Best is to not add yogurt in fermented rice because yogurt contains lacto bacillus species of bacteria while fermented rice without yogurt will have other healthy bacteria. Addition of yogurt to fermented bacteria will bring a competition between two groups of healthy bacteria and the yogurt bacteria will win over.

So eating fermented rice without yogurt is the best. But if you have no choice, you can add yogurt while eating so that you eat both the healthy types of bacteria.

I eat for lunch rice along with vegetables curries with regular rice or with fermented rice. But I eat yogurt rice with fermented rice to end the lunch. This way I eat everyday healthy fermented bacteria.
